Last minute healthy holiday recipes
Looking for that perfect dish to take to Aunt Patty's? You want something that won't have everyone saying, "ugh-it's the veggie girl". I love to bring beautiful foods along with me that will get even the meat eaters taking a scoop. Usually, that means dessert, but there are other colorful and festive dishes a plant-pushing person can bring.
As I usually recommend, make sure you DO bring something for yourself to the holiday gathering. Most of us don't live in families where plant-based foods are the norm. I never feel people should have to have food for me, and always offer to bring things I can eat and share. This adds to the table, and doesn't single you out. I try to make nice this way. I'd love to hear what dishes you're planning on bringing too! Even though I don't personally celebrate Christmas, it's one of my favorite times of year! We have two family gatherings on Christmas Day, and I'll be bringing along my oil free Sage Roasted Veggies (as requested) as well as a quinoa salad to one, some homemade veggie burgers and hummus to another. All of these are easy do-aheads!

As a treat, I just whipped up some chocolate macadamia nut biscotti, and some pumpkin bread to take along to another party for Christmas Eve. Both freeze perfectly, and are ready to go when we need to leave!
