It's summertime. It's hot. You have NO desire to cook. OK, maybe that's me right now? While I love cooking, sometimes you just want something super easy and light to eat. You don't have to eat only salad-I promise!  Eating raw foods aren't only easy to prepare (some can be complex but they don't have to be), they also help you to retain much of the nutrient levels found in the plants.  Many enzymes and phytonutrients in plants get destroyed or diminished by the cooking process. When you consume plants in their raw form, you can more easily absorb these nutrients....
